Crepes

Clint and I went to a BBQ at Jim and Tassey’s place last night and Tassey made some yummy crepes for dessert. So I asked her for her recipe since everytime I try to make them they turn out to be shit. So I got up this morning and made a batch. I tweaked it a little bit to suit my own tastes but they turned out really good! So here’s my version of her recipe:
1 cup flour
1 cup milk
4 eggs
1/2 tsp salt
2 tblsp melted butter
1/2 tsp vanilla extract
a nice shot of 12 year old scotch (or brandy)
Mix together until smooth and put in the fridge for an hour or so. Oil and heat a skillet over medium heat. Spoon in batter and swirl the pan until the batter is even and round to the size of your liking. Wait until the edges turn brown and start to curl up. Flip and wait 2 minutes then serve!! They are great with fresh fruit, sugar and whipped cream.
